The inverse association between the groups of odd-chain (OCFA) and branched-chain (BCFA) development diseases in humans have generated interest scientific community. In experiment 1, extent passage odd- fatty acids (OBCFA) from milk fat to fresh cheese was studied sheep goats. Milk collected two processing plants west Sardinia (Italy) sampled every 2 weeks during spring (March, April May). addition, a survey carried out evaluate seasonal variation OBCFA concentrations goats’ cheeses all lactation period January June. Furthermore, assess main differences among goat cheese, principal component analysis (PCA) applied (FA) profile.
